In collaboration with Unlisted Collection: three independent restaurants are offered - Automata by Clayton Wells formerly of Momofuku Seiobo; Silvereye by Sam Miller, former executive sous chef at San Pellegrino World's Best New Restaurant Noma, and Kensington Street Social by Jason Atherton, Michelin starred British chef and long-time Unlisted Collection: collaborator. The Old Clare Hotel is in the heart of Chippendale, an emerging and vibrant neighbourhood and a new focal point for Sydney's artistically minded and creative workspaces.
